You're prompted at the start of the game to pick a difficulty level, with the professor asking you if you're an experienced trainer, etc.
Easy mode is default, full tutorial stuff, more forgiving level curve, AI isn't as good, etc.
Normal mode cuts out most of the tutorials and has a normal level curve, with less forgiving AI. Gym leaders and rivals pick up an extra Pokemon later on.
Hard mode is of course harder, everything higher leveled, top-of-the-line AI, etc.
Completing a run on Hard mode gives you access to a final ROMhack-tier difficulty level on later playthroughs, full party Gym Leaders from the start, parabolic level curve, unfair enemy team comps, NASA supercomputer AI, everything
