To compare: Fire/Fairy has four weaknesses, seven resistances and one immunity, wheres Fire/Psychic has five weaknesses and seven resistances. Psychic has always been a rather poor defensive typing.
Furthermore, out of Fire/Fairy's four weaknesses, one is Poison, which doesn't have a very strong presence as an offensive type, and is only used primarily for its ailment. And due to the strong presence of Dark and Dragon in the metagame, having a resistance and immunity to them, respectively, would be a huge advantage.
