If you have six pokemon out, you have to tell which to do what and they'll all get confused.
It would be a disadvantage.

It's the culture the pokeworld has been built on.

Pokemon battles aren't 'rules' it's just the clearly set way of life.

I'm not over-analizing. I think it would be pretty cool battle where team leader would go "oh, you think you won kiddo?" and use 7th pokemon which is much stronger than others.
It would give same feeling as using all revives battling Lance and finding out he isn't final boss.
