So the trainers from Diamond/Pearl/Platinum canonically defeated/captured the god and devil of their universe. Does that make them the most powerful trainers in the world?

Canon is believed to be the events that happen no matter what in the series. You can go through all of the games except b/w without catching a single legendary. Its expected that you catch Zekrom or Reshiram

Post game content is not Canon.

In Black and White, the Protagonist caught the legendary dragon before fighting N to counter his legendary dragon, in the main story.

Pretty sure I caught Groudon before the elite 4 in Ruby. Also you could get some of the legendary trios before the E4 in most gens if I'm not mistaken.

So it's canon that each trainer only has his starter Pokemon and maybe one egg that someone handed him later. And the Gen 5 guys have a legendary.
