This probably won't be a satisfying answer, but the flower isn't actually part of them. They just tend to nest/hide in flowers. The flower actually changes depending on where you currently are.

Fairy/Grass is bloody potent. Resisting a shit-tonne of common STABs in the metagame including STABs of Garchomp and Keldeo. I just hope that Florges is good enough to hold its own in the meta (it won't)

because it's just holding a flower, it isn't actually have the biological properties of a grass type. Same reason why Alakazam isn't part Steel.

Grass actually has great synergy with a lot of common types in the metagame. It's invaluable for forming defensive cores because of the types it resists. Ever hear of CeleTran or FerroCent?

The problem is Florges isn't a defensive Pokemon and Grass is terrible offensively. It also gains a weakness to Fire, Ice and Flying, and makes its Poison weakness crippling. I'd much rather stay safe with pure Fairy.

It's pretty obvious from looking at it, but Floette had high Speed and Special Attack, so unless there's a radical shift when it evolves Florges would be similar. I'm basing this off the Super Training screenshot. I assumed the hexagon graph it gives has the base stat distribution as the inner shape and the EV distribution as the outer shape.

Actually, as with defense, Grass has a lot of useful synergy with other attacking types even if it's not a great STAB on its own. It offers important coverage against Water and Ground, two types commonly seen on defensive pokes that resist some common attacking types like Ice, Fire, Water, Electric, and Rock.

Grass is resisted by 7 types which severely limits its usefulness compared to other options. Being super-effective against Water has limited use considering all Water types learn Ice-type moves. Ground and Rock have a variety of other safer weaknesses like Water and Fighting.

I think the complaint has more to do with some overlapping coverage between grass and fairy. Steel and fire resist both.

Well there is that Light Ray move it supposedly learns that also does Electric damage. Could mean it has coverage against Flying and suchlike (also it wrecks water-types)

That's true, and also makes having Grass STAB less necessary since the move possibly being 4x effective against Water by itself would generally do more than enough damage anyway. I'd point out that if it does both Grass and Electric damage it'd be neutral to Flying types.

For comparison, here's Pikachu's screenshot from the official site

It makes sense that the speed is higher in this chart, but the attacks and defences are equal here. Though if it was IVs instead it would be all over the place

There's only a 25 point difference between them, even less between SpA and SpD. There's a much greater difference between Speed and the rest of its stats. I'd love to see Shuckle's.
It's also possible it represents actual stats rather than base, but I don't know how they'd incorporate EV measurement into that.
