So it's been two generations and Sylveon is the only evolution we've seen of an old Pokemon family. I'm a little skeptical about this, but what are the chances we're going to see a dex containing about 1/3 new evolutions of old Pokemon like we had in DPPt next generation?

I think someone would have discovered at least one evolution of an old Pokemon, if they existed. But they were mostly focusing on new ones, so maybe not.

Not a chance, for the reasons stated above. We haven't had new crossgen evos outside of Eevee since Gen IV, and a lot of those evolutions seemed like they were supposed to be in Gen III in the first place, but GF just didn't have the resources to get them done in time.
