What are Voltorb and Electrode suppossed to be made of?

They are not Steel-type but whatever material they're made of should have electric conductivity

Also what would happen if you made an autopsy of an Electrode/Voltorb corpse what kind of organ would they have?

Well, they'd look like the inside of pokéballs, and since their 'organs' are literal energy stored inside their ball bodies, a dead one being autopsied would be hollow inside.
