If you have to level up your Pokemon during battle, while they're holding their special mineral or whatever, how does that work for level 100 mons?

You can't level up any further, so can you no longer mega-evolve your level 100s?

Or will they just stay permanently mega-evolved?

Does anybody have an answer for this? It's been haunting me.
