For example, we know that Super Training makes raising EVs a matter of simple minigame-playing; so all the complex stuff about figuring out which mons to KO for what EVs, keeping tallies of how many, etc is pretty much negated.
You can now EV train fairly easily and clearly, and you'll only need to count if you're getting SUPER specific (like, one stat point is the difference between victory and defeat... which it sometimes is, but come on).
IV's MAY be different too. I say this because several changes GF has made indicate that they'd like to make the competitive scene more accessible; Super Training for EVs is an obvious one, but the introduction of the Ability Capsule is another. The Ability Capsule lets you change a Pokemon's ability without having to breed a new one; this is clearly aimed at narrowing the effects of the RNG, and saying to you "if you work hard enough, your mons can more or less be crafted".
We also know that Hidden Power now has a fixed power, and it's likely that it's type is calculated differently based on Fairy being introduced. So that's another kind of critical element of randomness totally removed.
So, what of IVs? Will you still have to chain breed with special items for hours to get respectable competitive IVs? Possibly, but I doubt it. If IVs still exist, there's at least a passable chance that GF will introduce new items or facilities which let you modify them, or at least make breeding for them more easy.
tl;dr learn how EVs and IVs work and why they matter, but don't waste too much time learning to manipulate them, all that info is outdated.
