Natures determine which the growth of ones stats. Most natures raise the growth of one stat and lower the growth of another, however some do not affect growth at all.
ex. My male fennekin is adamant natured, so his attack grows quicker while his special attack grows slower (didn't feel like soft resetting so just going with it).
In single player, they're pretty irrelevant, but they are pretty key in online battles. If you are interested, I recommend going to serebii or something to examine what other natures do
OT: It all depends on luck. Some it took countless times, some got it on the first try. You just seem to have shitty luck, OP.
