You can catch Bagon and Axew (i know, technically not pseudo but whatever) before the second gym.

I'm pretty new to taking Pokemon on a serious level. I don't know shit about whatever EVs are or natures.

Because I want a larvitar that belongs to me, not a traded one, and early, so an egg is the only way, and eggs can be obtained through a daycare early in the game and females determine the species, except when there's a ditto involved. But I don't have a ditto.

People generally want female because it decides what Pokemon hatches out of an egg. If they get a bad nature or IVs, they can just keep breeding and hatching to get the perfect mon that they want.
Also if you overlevel it before you get the gym badge required it might not listen to you.
