Since Aegislash has the ability Stance Change, would that mean I need to EV train DEF to get the highest ATK? Or could I just EV train its ATK stat and get the desired result?

How does that make any sense? If you want him to have high ATK, train ATK.

It's stats don't switch, the distributions just change. You're thinking about it too much.
