What would you guys say the estimate is to fully EV train a pokemon using this?
I'm guessing about 2 hours depending on which stats.
Defense and HP training seem too easy

Yes. But due to the wide variety on every route it would be hard to do so until you get the Poke Radar.

Use 10 Vitamins, then do super training on Lv 3. You EV up fast, it's crazy since. The game even knows that 252 EV's are the max you can put into a stat, so 252 in two stats, and the 6 EV's left over in any stat. Great Job Game Freak, I"m impressed.
