Presumably being
immortal is different from just being old and not dying. He'll age in different ways; he doesn't look like a really, really, old man, so maybe he was permanently trapped in the state of aging he was in when he became immortal? So, he was still growing a tiny bit, and he kept growing a tiny bit for all those years.
