Gen I is the only generation to have cool intermediate starter evo stages.
Every other gen is just "oh wow I cant wait for level 36".

Grovyle is the only exception.

Gen 1 first stages were good, but holy fuck were their evolutions bad. They're all fat and horribly overrated. First stages were them in their prime, final evo is them after getting fat on beers and pizza.

Emboar is a pig, AND based on Zhu Bajie, from Journey to the West; it makes sense for it to have extra weight.
Meganium is a sauropod dinosaur (with antannae and flower petals), so ofc it's bulky.
