Because immortality takes away the effects of aging, specifically the bad things about it, like dying. So I guess since your body is forever healthy you continue to grow?

Or since it's just a game they made him super tall to show how strong/important he was.

I assumed it wasn't because of his immortality, rather, because of the time he came from. He was a king of myth and legend. He's a famous figurehead from that time. Sort of like a Greek or Roman hero coming into being; he's literally larger than life.
