Out of the first 5, three of them had at least 4 stats inherited from both sides of the parents. And one of them lucked out and got all those 4 stats at 31 IV.
I've done some more breeding afterwards with def/sp.def ditto and atk/def female, and while I didn't have such incredible luck as the first time, I did get the 3 stats I wanted to pass down on the new pokemon fairly soon.
tldr; Destiny Knot on either parent lets you get at LEAST 4 IV from either parent. Like in example, getting both atk/speed & def/sp.def from parents.
