Hey guys, I was trying out Super Training just to see if I could get an understanding of all this EV shit. So I maxed out a level 10 Pumpkaboo's Attack stat, and then I leveled it up once, and the attack only went up 1 point. Really confused, here. Can anyone explain this shit?

When you gain EV points the stats go up that instant, not when you level up.

super training immediately factors into a pokemon's stats, so its stats change right after the training, not before it gains a level

EV training only really pays out dividends when at a higher level.

At level 100, a maxed out EV can give 63 additional points to your base stats.

ok, quickest explanation possible
4EV= 1 stat at level 100
252 EV= 63 stat at level 100
252 EV= max amount of EV you can/should have in a stat.
your pokemon is level 10, so it will only show 10% of those 63 points.
every level, your pokemon will gain 0.63 more stats (affected by natures) until it maxes out at level 100.

that's how this shit works in a nutshell. also i believe training changes stats inmediately (so that you can do it on level 100's)

So let's say I level up my EV trained Pokemon to 50, since that's like the standard level cap. Will the stats be exactly the same as if it was level 100, except it's calculated at what it would be at level 50?

Let's say you're using a Supersize pumpkaboo

At level 50 with 0 EVs, its attack stat can be anywhere between 63 and 78 (I think. Depending on Nature)

With 252 EVs in Attack, it's attack stat 106-129.
