EVs were never that "hardcore" anyway, maybe IVs were.
I'm glad horde EV training gets the job done in like 10 minutes along with some visual feedback on the Super Training graph. Shit sucked when trying to EV train defensive mons back in Pearl and White.

how do reset bags even work?

like i mean i thought evs affected the stats you get after a level.

for example if i focus atk and def i will get slightly more points in those attributes.

but later on if i decide i want atk and speed would i reset bag and lose all my previously gained bonuses from being specialized in atk and def?

Reset Bag resets everything.
If you want to reset a specific EV then you'll have to do it the old fashioned way with the EV-reducing berries. It's easy to max out an EV anyway with hordes now/

EVs are auto apply to pokemon since HG/SS.
In other words even level 100 Pokemon can gain EV.

The berry farm makes EV reducing berries far easier to get a bagful of, though. Coupled with the visual graph, they're honestly a lot more useful than the reset bag once you get access to all 6 of them.
