No, you'll get 5 IVs passed down with one guaranteed by the power item.

The 6th stat is random.

You can give a Destiny Knot to one and a Power item to guarantee one particular IV you wanted

But you're better off going Destiny Knot + Everstone to get the nature you want and leave it to chance that that one IV you really wanted passes

You seem to be misunderstanding the idea, Destiny knot takes 5 IV's from EITHER parent, you might give it to ditto but it'll take the other pokemons ATK for example

The power item has precedence, so If you use a power anklet on one pokemon, its Speed IV is passed down, and if the other pokemon holds a destiny knot, 4 more IVs from either parent are also passed down.

Which is enough to be useful for most pokemon.

You can't breed dittos, so getting one with perfect IVs would be incredibly tedious.

The best you can expect to do is get one with maybe 3 IVs and breed for a good male in each egg group.

There's nothing comprehensive really out there for X & Y yet, but most of it is the same as Gen V other than the Destiny knot and females supposedly passing egg moves.
