Can I give a traded pokemon a nickname if the original trainer didn't give it one?
Also what happens if I get french Sandslash without a nickname?
Will it be called Sandslash or Sablaireau?

No. Its been like that since gen1.
However UNEVOLVED pokemon that weren't nicknamed AND have a different language species name will be localized upon evolution.

the German translations have some weird-ass names.

I got a german noibat from a trade named eF eM, I thought someone had made a neat nickname, but then its name changed to noivern when it evolved and I was kind of disappointed.

I just did some research cause well I got nothing else to do.
UHaFnir is a mix of UHF and Fafnir which is a dragon from norse mythology.
I guess the name makes sense for a german.
