The real question is, why isn't there an arena of sorts filled with trainers you've street passed, with pokemon who all get set to 60 or 70 or some possible way to increase difficulty. THAT would be a fun post game

thats different. Amie is an absolutely fucking massive feature, and has been incredibly well received.
Then getting rid of it would be like next gen them deciding held items or shinies don't exist anymore.

(plus its the only way to evolve sylveon, which is proof enough its here to stay)

It'll just be renamed and slightly modified if anything.
I can't even believe people thing they will remove a feature they programmed in over 700 different pokemon animations into, hyped an entire generation around, is one of the most well recieved things pokemon has ever made, and is such a huge impact on the game and the only way of evolving pokemon.
