So after breeding for a while I noticed IVs mean jack shit if you're playing with the Nintendo rules I was feeling down because my Mawile had everything I needed: perfect HP, perfect Atk, perfect SpD, zero speed... but only 19 at Def. Then I started comparing stats at lv50 and the difference in def between my mawile with 19 def and another mawile with 31 def was 6 fucking points. (99 and 105) EVs are way more important, right?

Yes. IVs aren't TOO big of a deal in an irrelevant stat. Worst situation is if it's 0 but even then. What's most important is having a positive nature and high IVs in the relevant stats

31 IV just mean an extra 31 in the stat at level 100. So if you have 0 IV Def you would be at 100. At level 100 with a 31 IV in Def you would have 131.

30 IV means an extra 3 in the stat with a nature that benefits whatever stat holds the 30 IV.

The difference between 30 def and 31 def isnt much. The difference between 30 and 31 speed though can be gigantic. Also keep in mind that nintendos wifi is capped at lvl 50. All the ev and iv info you see people here telling you to use around here are for lvl 100. For example the max evs you want to use for a stat at lvl 50 is 248 not 252.

Depends completely on the pokemon. Fragile sweepers are probably going to die whether their HP is 0 or 31. A slow, tanky pokemon won't care about outspeeding anything.
