What would be a good way to ev train an ampharos for mega ampharos?
I have a modest mareep right now and trained it for more Special attack but I have no idea of what other stat should be ev trained. Help?

Just max HP. Its speed sucks anyway. You won't outspeed shit if invested into speed.

That's fine. Any combination of HP/Def/SDef after maxing Special Attack is ok. Just don't invest any into Atk or Spe.

There's math about how 1 hp point is equal to about .75 points of def/sdef, which means it's best to max HP over a defensive stat since you can switch into more than only physical or only special attacks.

HP. Only EV the defenses if you intend for the Pokemon to be a purely physical or special wall.
That being said, if your Pokemon is a purely physical/special wall, you should still dump the EV's into HP if it's HP stat is lower than the relevant defensive stat.
