They do this even to nonliving entities. With something like Delphox (and indeed most pokemon) that are EXPLICITLY anthropomorphized, that tendency is exacerbated considerably.
Foxes have relatively masculine faces, they're very angular and not especially soft.
Again, the degree to which we gender things varies based on how human the thing appears in the first place, but we kinda do it for everything, one way or another
