To answer yours, Ice is rather fragile as far as the metagame. It's weak to fighting/fire/rock/steel which are common types (most pokemon at the very least have a coverage move for at least one of these types). I suppose Frosslass/Rotom could counter the fighting weakness with the ghost immunity, but I think it's too much of a risk, personally.
If you think you can do it, go for it, by all means.

I've yet to exchange those zygardes for anything, but I will eventually.

Most Pokemon lose like, 10-20 points at most on IVs and maxing them out by breeding from 21-31 would only give you an extra 10 points. while ignoring nature could cost you somewhere around 40-50 points average on a Pokemon. More if you have sets that rely on modifiers, or even abilities. That's 20-40 points of attack on Marill compared to like, 80 attack with Adamant.
