Well Im trying my first go around at perfect IV breeding, I have 5 different Dittos, with different perfect IVs and 2 boxes of Dratinis to choose from.

how important are IVs? like how noticeable is the different between 31 and 28

Something like a defensive pokemon that doesn't worry about speed, or just 3 most important stats (eg atk speed & hp).
Breeding as a whole is a hell of a lot less painful now, you can guarantee the nature, males can pass more things down in general & power items/destiny knot helps a ton too.
Remember you only have to go as far as you want to, and to plan stuff out properly ahead of time, it saves a ton of headache later on.
