How can you possibly hatch a perfect 6/6 IVs pokémon? Destiny Knot only lets to pass down 5 IVs, so the sixth is always random.
Am I wrong?

No you're right. Once you have a setup to semi reliably breed pokemon with 5 IV the 6th is basically in gods hands. Usually you just ignore the 6th unless you really need both Attack and Special Attack maxed.

So I just have to keep hatching and hope the gods of RNG will bless me with a perfect sixth IV.
On that note, how does a Ralts with everything maxed out aside from Hp sound?

Pretty much, but as >>15277950 said, if that random IV happens to be Attack or Special Attack, and your pokemon doesn't use that stat for its intended moves, you shouldn't care about it.
