Is there any faster way if you wanna MM? Or do the eggs stay exactly the same if you soft-reset so that you'll never get a shiny?

the content of an egg is determined when you get them. Soft resetting will get you the same exact pokemon every time. The only way to MM is to get more eggs.

Eggs stay the same if you softreset.

So you could save, take the egg, hatch it and if it isn't what you want, soft reset?
