Shit IVs means at least being 30 points underpowered in a stat while a neutral nature is about half that.

I'm studying this shit as we speak.

I have an Adamant Blaziken, Speed Boost and all, fully EV trained, but has a 0 IV in Attack. So far, it does sort of well.

With a pokemon like that, it can perform okay, it's just gimped out of about 35 points in its' attack stat.

If the Pokemon has at least 315 Attack with max EVs and 0 IVs, nature is more important
For everything below that, IVs are more important

(Base*2+63+IV)*1.1>Base*2+94
Base>123.5-5.5*IV
At an average IV of 15, you only need a base stat of 41 or higher with a favorable nature.
Even with an IV of 0, a base stat of 123.5 or more

Tl:dr nature is more important
