Speaking of which, I was a little disappointed with the lack of post-game legends. We just had Mewtwo X/Y and Zygarde right? I know we've got three more coming but Diamond/Pearl for example had (without distribution) a lake trio, Heatran, Giratina, and Regigigas

Good point, I don't even like legendaries personally; it's just nice having a thing to go out and do/collect after you beat the Elite Four. Gen VI just gave us a city and the Battle Maison which is no PWT or Battle Frontier

It actually didn't. It went underboard with non-legendaries. B/W had the same amount of legendaries but because there were so many new Pokemon, it's not nearly as much of an issue in V as it was in IV.

And seriously, there's a difference between not wanting to overdo it and just not even trying. What we got was the latter.

megas are never as good as real new pokemon. However the powerplant trio would be good, the powerplant trio + mega birds/dogs would've been better
