Other than gyarados, my first caught shiny was vulpix in Sapphire. I did hatch a shiny pichu in Crystal, but the chance of getting a shiny from the mystery egg in that game was like 1/64 or something.

My first Shiny was a Rattata in HG. Followed by hatching a Charmander in FR to migrate to HG, followed by a Charmander in W2 to trade to my brother. I fucking hate Charizard.

I skipped BW so all my shinies are stuck in HGSS forever. So my first shiny de facto going onward is a Carvahna from chain fishing.

I have a decent amount in those games, about 20? from chaining and 10 from random encounters. A random shiny Clefairy actually broke one of my chains once, good day.
