So does perfect IV training matter in the Battle Maison? I've read how bullshit the RNG is in there so I'm wondering if I should go through all that trouble of perfect IV training. I've yet to participate in any of the Super matches because my time has been consumed with breeding and obtaining perfect IVs. How far will just having a good nature, moveset, and proper EV distribution get me? I want to start enjoying the post game...

It's so easy to breed good IVs now that you might as well do it. If you don't then if you ever do you won't have anything but online to use your team for.
It's quite satisfying breeding your perfect mons though.

Maybe it's the fact that I don't have a Ditto with perfect IVs that I find this type of training so tedious. Without a Ditto, I just need to always have a Destiny Knot equipped on the parent with the best IVs, right? Then I breed them with the offspring with better IVs and repeat until completion?

That will work but it'll be a lot slower. Really, the best thing to do is just find someone with a Ditto safari. You can get two 3IV Ditto in a matter of an hour and then you can use them for every future breeding project.
Though single gender pokemon are a bit tricky

It doesn't matter which parent has the Destiny Knot
So use it in conjunction with an Everstone on whichever parent has the nature you want, or without it for random natures.
It can be a little tedious, but it's worth it usually.
