I picked up Tyranitar because my GF sweeps me with psychic bullshit, and Tyranitar just stomps her.

Psychic is one of the weakest types in the game and there are tons of other ways to deal with it. For example, damn near any steel type.

Use swords dance first then. An unboosted shadow ball from espeon shouldn't be ohkoing it unless you did something stupid like not ev train ir or have a bad nature or something.

Yeah, you're gonna want to look up what ev training proper is and what natures do. Then look up what ivs are and how to breed for then. Then learn how to compose balanced teams that support each other and likely have to accept the fact that most of your favorite pokemon are probably really weak. Chances are she's knows all this shit already and that's why she's beating you so hard.

Actually leveling up should be the least of your worries. Go look into the steps required to breed for a 5x perfect iv pokemon with a proper nature and hidden ability. Then ask yourself if it's really worth the effort to try to take away one of the things your girlfriend is better than you at.
