About breeding for IVs.

I have a 2 IV Ditto in HP and SpD, and an Aerodactyl with max'd IVs in Atk, Def, and Spd. If I were to give one a destiny knot would there be a chance of getting an Aerodactyl with max'd IVs in all but SpA (which doesn't really matter on this particular poke)?

Yes but it'd be pretty low.
There's a 1/6 chance that SpA is not passed on by destiny not (meaning the other 4 are). Then, you would have to get the inheritance from the specific parent you want. Each of those is a 1/2 chance of inheriting from the one you want as there is no overlap. This means if SpA isn't passed on, you have a 1/32 chance to pass what you want. The overall probability is 1/6 * 1/32 = 1/196.

Yes. Just replace your ditto when you get an opposite gender with HP SpD, and/or when you get a third stat. do it when you get two 4s. two 4s= a 5 stat

What I would recommend is breeding until you get an opposite gender aerodactyl with HP, SpD, and ONE of Att/Def/Spe (if you get more here that's fine, but don't hold out for it).
Then, swap that one out with the ditto. Give what the ditto was holding to this new aerodactyl. Keep breeding until you get 4 IV Aero's of different genders with one stat not overlapping (lets say HP/Att/Def/SpD and HP/Att/Def/Spe). Breed those two until you get a 5IV.

Any reason why replacing the Ditto would be better? Looking at the Serebiis, Aerodactyl has a 1 in 10 chance of being female.

Oh a non 50% gender ratio might actually complicate that step. The point of replacing the ditto is so you have more stat overlaps, which leads to a double in the probability.

Think it of this way, you roll a 6 sided die to determine which stat ISN'T passed. Then, you flip coins to determine which parent passes on their stat. If both parent have 31 in that stat, the result of that coin flip doesn't matter and thus leads to a double in probability.

Similar question, I have a ditto with perfect Spa and Speed with a destiny knot and a random other pokeomon, what are the chances for passing down spatt and speed? Ive hatched like 30 eggs and cant get one, this seems like It would be much easier. Would it be better to use a power item?

You want a 31 IV in HP, attack, defense, special defense and speed between your two parents, any that overlap beyond that is fine, just a higher chance that a 31 IV for that stat will be passed down.

I'm breeding Conkeldurrs with Mach Punch and Drain Punch right now using this method, I've got two parents each with 4 (5 if you count the 0 spe IV) perfect IVs, with 2 IVs overlapping between the two parents (HP and ATK.)

Now I just have to hatch eggs until I get one with the 31/31/31/x/31/0 spread I want with the ability I want.

Eerily convenient, my ditto just popped out a 4 IV female Aero with IVs in HP, Atk, SpD, and Spd. So this with a 4 IV (4 or more gives a better chance of getting what I want, right?) male Aero with Def should work better?

Power items don't stack with destiny knot (I read somewhere that the power items override the destiny knot and won't guarentee 5 IVs being passed). Also, if you are still having trouble take one of the kids that has either 31 SpA or Spe and put them with the ditto.

just bred a tangela and petilil with 3 maxed IV's each. Managed to get a petilil with 5 maxed IVs and the IV judge says it has outstanding potential. is that better than relatively superior or should I keep breeding?

Outstanding potential is better than relatively superior, but both only measure the sum of the IVs. All that is really important is you get the 5 maxed IVs in the stats that you want (which is what you have so no need to keep going).

Also, I think even if you have 31/0/31/31/31/31 you will still get outstanding potential. But there should be one stat you shouldn't care about being non-31(usually the Att or SpA stat).
