I got some pretty good Honedge rejects through Wonder Trade so I figured I might as well breed one, but 2 questions

1. What is the desired EV spread on these guys?

2. What purpose does the Brave nature/0 Speed IV serve?

1. Debatable. Honestly it depends on what you want out of it, 252s in anything but speed can work depending on what you run.

2. Stance change alters your form when you attack. You don't want to be in attack form when you're attacked.

The typical King's Shield/Sacred Sword or Iron Head/Sword's Dance/Shadow Sneak set seems to benefit mostly from max Atk/HP EVs I believe.

A slower Aegi is typically better than a faster one, as an attacking move will flip his defenses and attacks stats when it forces him into Blade Forme from Shield Forme. You want to take the opponent's attack first in Shield Forme, switch into Blade Forme and attack second. Typically the next round you either priority King's Shield to get back into Shield Forme, or priority Shadow Sneak to finish off an opponent not killed by the Sacred Sword/Shadow Sneak.

I go 252hp/252 attack
You may want to try bulkier, investing in def and spdef since he can just swords dance anyway.
I use
Brave, 0 speed IV, 252hp/252atk
Weakness policy
>Sacred sword
>shadow sneak
>swords dance
>kings shield
If you get +4 you can usually ohko stuff with just shadow sneak.
