How valuable is a shiny ditto? I mean, he's got imposter but he also has Lax and max speed and def. Seems kinda useless to me. Can it be used for breeding to get a higher likelihood of shinies?

Breeding a shiny has the same chances as a regular. But maybe if it's IV's are good you can use it for breeding.

The only stat that matter for Imposter Ditto is HP, which isn't bound to any nature.

When it transform, I copies all the stats of the Pokemon it transform into except HP. Just give it the speed power thing to make it faster.
