Had a 4IV father and a 2IV mother to start out

I got a 5IV male with protean just now before I managed to hatch a better mother. That's just nuts.

Which is good, because I was planning on using one of the rejects to breed for an Adamant physical one (for Edgyzard X), but if I can just use that one, then that's fine too.

If both parents aren't pentaperfect your chances of the child not also having 5IVs plummet through to who knows where.

There is a 33% chance your child will have perfect stats even if both parent have their IVs in the right places..
