I'm doing something Pokemon-related for a project I'm working on and it has to includes a write-up. How would you describe what a Pokemon is to someone who has hardly any idea what one is?

It's a real life animal corrupted by Japanese radiation.

A Pokemon is a creature that has influences from a real world animal but with some sort of elemental power. The Pokemon are often named with some sort of pun or a play on words

Expanding on my post, you should also mention that people use special devices called ''Pokeballs'' to capture pokemon and befriend and train them. People that capture pokemon and train them are called Pokemon Trainers.
