I decided to start shiny hunting in X / Y by using the Masuda Method but all I know is that you need to breed your Pokemon with a shiny Pokemon from another country besides yours. Is anyone willing to trade a shiny Ditto to me from another region besides Canada?

Actually it's language that matters. So an American Pokemon would be no more useful to you than a Canadian one.

Do spanish games count? I got a mon with a SPA tag next to its name, but spanish pokemon are all english named.

Yes, that counts. It may happen to have the same name in Spanish as English, but the SPA tag is enough.
