The Dark type represents evil, or more accurately dirty fighting tactics, trickery. Their immunity to psychic comes from having minds so evil, or better to say, unpredictable, that psychics are unable to use their power against them simply because they cannot comprehend a dark type's thoughts. The way a dark type fights is also especially effective on psychic types that need to concentrate to use their power. Jumping out and slashing out of nowhere, a sucker punch, releasing a pulse of eerie thoughts, all these would be especially devastating to someone trying to concentrate. Same reason why bugs are strong against them, insects are good and disturbing psychics and disrupting concentration.
Ghosts, while scary, can also be explained in a different way. Oriental Asian superstition states that how much spiritual power a person has can also make them more vulnerable to spirits. Someone with lots of spiritual power, psychic types, would be especially vulnerable to a spirit's attack, while on the contrary side normal types, with nothing at all, cannot touch ghosts at all, and return cannot be touched by them as well. I know because I was raised by a Chinese family.
