What is a type? Why are some pokemon types super effective while others are shrugged off?

Like bug beating dark as in lightning bugs illuminate the darkness surrounding them or fire burning grass.
But some don't really make sense. Or do they?

Like, why is fire super effective against ice? Molten ice is literally water, something fire is weak against. Besides, if ice is heated up too fast, it can combust spontaneously and turn straight into steam, extinguishing any flame because of its moisture.

Can you help me explaining the type coverages?
