as it stands, I'm clueless as to how to train my EVs when it comes to support

For defense, is it better to spread them equally between Def and SpD or should I focus on whatever my mons have more base stats on? I realize that it'll all depend on which team I'll be facing online but what is the most common recommendation?

Also, for speed, I've noticed that most don't bother putting points in anything below 55 base. Is there a reason behind it and am I fucked if half my team have shit speed to begin with?

HP is basically a point in both defenses.
People use low speed mons to use Trick Room.

It's worse to do that always. Put them in HP to even yourself out if you're not going to become a dedicated physical wall or something.

If anything, focus on the one you have less base stats on. EVs are a straight 63 point boost regardless of the Pokemon's base stats. Meaning something that regularly hits 100 defense now hits 163, a 63% increase. Whereas something that regularly hits 400 special defense now hits 463, or only a 15.75% increase.
If you're trying to be a wall, you usually don't want to be forced out by just anything that switches in. So something like Blissey would usually want to run Bold 252 defense so all physical moves don't outright kill it. It'd still fear STAB close combat and sacred sword coming from things, but at least now it doesn't have to run away from every salamence or anything and can thunder wave or whatever in return.

For the sake of things, stuff with lower speed usually has higher bulk. Look at speed tiers and see what you actually can outspeed and if they're threats. If they're not, it's not worth investing to beat them. If they are legitimate threats, it's only worth it to reach and pass their speed tier if possible. If it's not possible, you're better off not even bothering.

For the sake of things, it's usually more base 80 or so speed that it stops mattering whether or not you invest in speed. You'll lose to everything that invests in speed and everything around and under you usually doesn't invest in speed at all.
