Breeding two 6IVs with the knot

Just bred two 6IV Minccinos with destiny knot + everstone and one of the babies had 3IVs... I thought destiny knot was supposed to always pass 5IVs down?

That can happen, when it picks stats it picks two out of the 12 total from the parents. If it picks the same stat for both, it passes down the highest. So if it passed down two attacks and two defenses, as well as one other stat, the baby can have 3.

I have something similar going on. I have 2 3IV panchams one with destiny knot. every single egg I've gotten are 2IV or less. I just want to know if I'm doing something wrong. (this is my first attempt at IV breeding)

You should only get 5IV and 6IV babies if you do everything correctly (Destiny Knot equipped, etc) and the parents really both have 6 perfect IVs.

The destiny knot takes 5 out of the 6 stats and randomly assigns them either the mother's or the father's IV value in that.
So you just need to be lucky that it picks the maxed IVs.

I checked again and both have perfect 6IVs and destiny knot is on the male and everstone is on the female. I can swap the items and see what happens. I think the majority of the eggs are 5IVs, but I keep getting 3IV and 4IVs mixed in there.

Destiny Knot can choose the same stats from both parents. Both their Attacks can be chosen, which leaves you with essentially 4 perfect stat chances. Then it can choose both their Defenses, leaving you with only 3 guaranteed perfect stats.
