I never realized Pokemon was this complex. Any tips to digest it all? It's all pretty intimidating to learn.

Just reserch it.
I think that we had this guide about how into pokémon with details and explanations about IVs, EVs, Natures, abilities, all that crap here on /vp/, but I don't see it for while.

Maybe pick an easy breeding project to try, if you're a hands on person. I don't know.

Here, lemme see if I can condense everything you need to know.
>Natures
One stat will be higher than normal, and one will be lower. There are a few neutral ones that don't increase or decrease any stat.
>IVs
Individual values, something introduced so that two people raising the same pokemon won't have literally the exact same pokemon. Invisible little annoying things that everyone bitches about. I play competitive and ignore IVs and have been doing perfectly well, so forget them if you don't want to deal with em.
>EVs
Also invisible numbers. However, you control these, and more easily now in gen 6. You have 508 points you can put into your pokemon's stats, but only 252 can fit into any one stat. You can't put all 508 into Attack for example. Most people pick two important stats, and then toss the last 4 into whatever. EVs are gained one of two ways. Super training as of gen 6, or by beating something. Kill a machop? That's one attack EV. Go to Serebii for what EVs any given pokemon can give you.

That's all the complex stuff and what held me back at first. Good luck in your endeavors OP, once you get it all and start coming up with strategies that work, it'll feel all worth it.

You don't have to learn everything all at once. To tell you the truth, I didn't know anything about stats/natures until Gen IV, and I've been playing every gen since Blue version.
Start out with small things, like egg moves and getting the correct nature. The first Pokemon I did this with was an Adamant, Rock Head, Head Smash Aggron in Heart Gold Version.
Then research EVs, (http://www.serebii.net/games/evs.shtml) once you think you understand them, try EV training a Pokemon. Again, My first one was something simple, 252 Attack/ 252 Speed / 4 HP, and in Gen 6 it's pretty easy to attain that.
As for breeding for IVs, I didn't start doing that until this generation. I had a friend help me out who let me borrow a perfect Pokemon of his for breeding, so you're kinda on your own for that.
