Let's say pokemon are somwhat like animals, so many are edible.

Which pokemon would you eat? I don't mean the obvious ones like vinalluxe or slurpuff

basculin's pokedex entry says it's super tasty, so I'd go with basculin.

Magikarp is supposed to be just skin and bones, so I wouldn't go there if I were you.

In the games it's clear they do. In the Kanto arc of the pokemon anime it's clear they do as well. Misty outright says that magikarp doesn't taste good, and there are images of cut meats that are implied to be pokemon. However as the series progresses and gets shittier they pussy out and everyone just eats berries. Pedopedia has a whole full autism mode page about it:
