I want to put all it's EV's into DEF and HP but wouldn't that throw it off the atk = def thing?

they're naturally even, just get it to lv.19 in daycare then rare candy

this is assuming you're not using a nature which effects either defense or attack.

if you want max defense with a +defense nature, and no attack investment whatsoever, you'll have to use ev berries to remove attack later
