You Leech Seed and pray it hits.
Crunch is probably going to be the go-to coverage move, so I don't think expecting it is really a big deal.
So the first crunch is an average of ~51%, the second is ~26.4. With Leech Seed and Leftovers, with Stealth Rock you end up like ~6% up from where you started with, and are barely outside of the 3HKO.
This also assumes that they miss the easy prediction, let you burn their kangaskhan, you hit with both leed seed and will-o-wisp, and you you are running a +def nature Gourgeist with max HP and def EV's and didn't invest into special bulk at all, which if you did makes it a guaranteed 3HKO.
So even if you leave after you have seeded Khan, you are still left with a gourgeist in the mid to high 20% range.
While it can work, it's not a hard counter at all.
