Not failproof, sure, but it gives you a fighting chance. Even if you land 2 hits of Water Shuriken each time, that still adds to 4 hits. Also, birds without Life Orb fail to OHKO altogether so you'll be hanging on at around 30% left afterwards.
Surprisingly, Assault Vest actually allows it to balk some special hits too. Assuming a neutral hit on not-Dark frog:
252+ SpA Gengar Shadow Ball vs. 0 HP / 0 SpD Assault Vest Greninja: 127-151 (44.5 - 52.9%) -- 23.8% chance to 2HKO
And when you're at +1 you can do neat shit like
