My personal choice is Shuckle, but then again, there's something cool about a single stage Pokemon.

There are a lot of oft ignored single-stage Pokemon that could really use an evolution.
Like Dunsparce, which could make a cool Normal/Dragon evo.
Or Farfetched, as either Flying/Normal or Flying/Fighting.
They're both good examples of Pokemon that haven't really been noteworthy in much beyond Dex filling capacity in a long time.

Would be a bad-ass Flying/Fighting type samuari bird. He deserves an Evo.

Still Rock/Bug, still slow and still highest defense, but turns into a snapping turtle sort of thing. It should have higher attack and have Truant as an ability.

Dunsparce isn't getting an evolution. It's based on a Japanese cryptid called the Tsuchinoko. If it turned into a dragon or something it would lose a lot of its purpose

That's better, but it would essentially lose its walling capabilities due to the aforementioned lack of leftovers. If it got something like Dry Skin or Toxic Heal, or really any other healing ability, it would make up for it pretty well. Toxic Heal would really only be usable in double battles, but still, you get the point.
